Smoked Turkey Breast

It’s that time of year when everyone is starting to plan out your Thanksgiving menus.  Well look no further I will have you covered in the turkey department!  This past year we got a wood pellet grill or smoker as most people call them. It is the best thing that has happened to our dinner table!   It cooks the juiciest chicken, steaks, kabobs and even pizza….yes I said pizza!  I loved this smoker from day one and we use it all the time.  A few weeks back I thought lets smoke a turkey breast…and it was AMAZING!!  And I have basically been craving to make another one..so I did!

Apple Brine Juice for turkeys

I will admit I am new to the entire brining your turkey.   I don’t think my parents ever did when I was younger so I never really knew much about it.   What I have been missing out on!!   I have brined several turkeys lately and they are seriously more flavorful and the juiciest turkey you will ever have.  I have decide that my favorite brine so far is the Apple Brine.

Turkey Chili

I made this Turkey Chili a few weeks ago when it was freezing outside.   Of course life happened and now im just getting around to blogging about this Turkey Chili.  This was my first time trying ground turkey.   I have friends that have used ground turkey for everything so I thought I would give this  Turkey Chili  a try using ground turkey.  Of course if you know me I like convenience and I tossed everything into the slow cooker.  Which honestly is the best way and my only way to cook any kind of chili or soup.

 With this being our first time trying ground turkey im still not sure if im hooked onto quite yet.   I’m still thinking that I need to try a few more recipes to see if I like ground turkey over hamburger.

Turkey and Wild Rice Soup

Speaking of soup this Turkey and Wild Rice soup is the winner recipe I tried with my Pacific Organic Chicken Stock.  The  flavors of the broth is amazing, it brought a lot of great flavor to my recipe.   I also love how they either have low sodium or they are unsalted.  Which I think is huge in soups, I much rather be able to taste the soup rather then all the salt you get other brands of chicken broth.

The main thing I love about their products is they are all organic.  We don’t eat  as much organic foods as I would like, but when we have to opportunity we do.  I love how I can grab one of their containers and I am able to pronounce everything on the label.   Which to me it means im getting great quality and I know im getting the freshest products.

Turkey & Wild Rice Soup

2 1/2 cups leftover turkey, chopped

1 cup wild rice

5 cups Pacific Organic Chicken Stock (or turkey stock)

1/2 cup onion, chopped

1/2 cup carrot, chopped

1/2 cup celery, chopped

1/2 cup mushrooms, chopped (optional)

2 cloves garlic, chopped

1 Tbsp soy sauce, reduced sodium

1/4 cup half and half

1/2 tsp salt

1/2 tsp black pepper

In a big stock pot add your chicken broth and veggies.  Let simmer for 10 minutes.  Next add in your rice and let simmer for 30 minutes.   Next add in your turkey,  half and half, soy sauce, salt and pepper and let  simmer for an additional 20 minutes.
