 Im ready for sunshine and warmth!  Im tired of having to wrap the kids up to go outside and shoveling mounds of snow.  We are getting Spring fever and the kids are so ready to be outside all day long playing in the water table.  So for now I will just dream of UV rays beating down on me.

Chicken and Wild Rice Soup

Fall is here and I am loving every second of it!  I’m sitting here now on my patio with a lite Fall breeze and the sun is shining even though its probably only 68 degrees right now.  The kids are in school and the baby is napping and its just so peaceful and quiet!   I love this time of y

ear because it gets me in the mood for soups!   I came across a recipe I made a long time ago and decided to give a few little quirks to fit my family and it turned out amazing.  I LOVED this Chicken and Wild Rice soup so much and even my kids devoured it!

Taco Soup

We haven’t really had a Winter at all this year in Utah.   We had a few little snow storms but nothing compared to our normal winters.    Last week we actually had a cold spell in the middle April, which is odd.  I think we even got about an inch of snow.   Just enough of a light dusting to cover my flowers.

Turkey Chili

I made this Turkey Chili a few weeks ago when it was freezing outside.   Of course life happened and now im just getting around to blogging about this Turkey Chili.  This was my first time trying ground turkey.   I have friends that have used ground turkey for everything so I thought I would give this  Turkey Chili  a try using ground turkey.  Of course if you know me I like convenience and I tossed everything into the slow cooker.  Which honestly is the best way and my only way to cook any kind of chili or soup.

 With this being our first time trying ground turkey im still not sure if im hooked onto quite yet.   I’m still thinking that I need to try a few more recipes to see if I like ground turkey over hamburger.

Slow Cooker Beef Stew

Utah has a cold front coming in this weekend.  We are expecting to get a few inches of snow in the Valleys and 1′-2′ feet of snow in the mountains.  Which means it is freezing cold and wet outside.  Which means we lounge around the house in our pajamas, we don’t get ready and we definitely don’t leave the house.  So I plan on starting this Slow Cooker Beef Stew in the crock-pot while me and the kiddo stare out the window and watch the snow fall.  I might even sneak a few rounds of the Olympic’s during nap time.    That is the great thing about this Slow Cooker Beef Stew, you can start dinner in the morning and you don’t have to worry about it again until later that evening.

How many of you love your Slow Cooker?  I absolutely love my slow cooker, and this Slow Cooker Beef Stew is my all time favorite stew!  I love how the meat just falls apart and the potatoes and carrots are the perfect tenderness.   Add a few bread sticks to dip into the sauce and we are set.

Homemade Chicken Noodle Soup

My grandpa has been making  this Homemade Chicken Noodle Soup for years!  Of course along the way it was been slightly modified but it is still just as delicious as it was when I was little girl spending the night at my grandparents house with all my cousins.  It has always been a family favorite and it always will be my favorite.    I love when recipes are passed down from generate to generate.  I love the memories that come along with all the recipes.

There is nothing better the having a nice warm bowl of soup on a cold Winter day!  The best part about homemade Chicken noodle soup is the noodles.  I personally think they need to be homemade.  The honestly make the soup taste so much better!

I love preparing a nice warm meal.  Then being able to sit down in a nice comfortable chair  wrapped around a fuzzy blanket watching the snow coming down or reading a good book.  There is just something so peaceful with watching the snow fall.  When everything is covered in fresh white layer and the fresh crispness in the air.   So make sure you think of this recipe the next time you see snow falling.  This recipe will soon become one of your family favorite recipes and they will fall in love with it.

With any good soup recipe, I always think the soup tastes better the next day after all the juices are able to soak into the noodles.   So feel free to make this the night before.  It does make a lot of soup and I have tried to half the recipe but some how I always end up making a huge batch still.  Which is fine because we always still eat all of it.  I only wish I could find a way to freeze this recipe without the noodles turning into a mush.

Turkey and Wild Rice Soup

Turkey & Wild Rice Soup

2 1/2 cups leftover turkey, chopped

1 cup wild rice

5 cups Pacific Organic Chicken Stock (or turkey stock)

1/2 cup onion, chopped

1/2 cup carrot, chopped

1/2 cup celery, chopped

1/2 cup mushrooms, chopped (optional)

2 cloves garlic, chopped

1 Tbsp soy sauce, reduced sodium

1/4 cup half and half

1/2 tsp salt

1/2 tsp black pepper

In a big stock pot add your chicken broth and veggies.  Let simmer for 10 minutes.  Next add in your rice and let simmer for 30 minutes.   Next add in your turkey,  half and half, soy sauce, salt and pepper and let  simmer for an additional 20 minutes.

Copycat Olive Garden’s Pasta E Fagioli Soup

I don’t know about you but I LOVE Olive Garden!    Every time me and girl friends get together we always meet up at Olive Garden.   I always and always get the Paste E Fagioli Soup with salad.   Now now let’s not  forget about the bread sticks and a side of alfredo dipping sauce!   Great…now I  want need to go to Olive Garden!   I’m pretty sure we always pick here because we want to eat “light and healthy” and with soup and salad your set…right!  Well wrong for me because I say bring on the bread sticks and keep them flowing and make sure my alfredo boat is always full!!!

Now with the temperatures dropping and snow falling it makes me want to eat soup and I always enjoy making soup for dinner.   Especially cause it is so easy to make and its usually low fat and very filing.   Except if you have bread and alfredo sauce!

Beefy Nacho Soup

It’s cold here in Utah!  Which means I can officially make soup every week and it would be okay!  I was looking through some cook books and I came across this recipe from Pillsbury.   It was extremly tasty and full of flavor.  Also it was super easy to make at a minutes notice. Plus I like how most of the ingredients I already have on hand.
