Sweet & Spicy Apple Cheddar Panini

I love a good grilled cheese sandwich.    There is just something about the crispy bread with  cheese oozing out of the middle.    Umm my favorite!     I often times at work get a grilled cheese sandwich but lately my co-workers have been getting these Apple Cheddar Panini.   I thought why not give it a try!   Well folks now im hooked!!

Copycat Chick-Fil-A Sandwich

Have you all heard of Chick-Fil-A?   It has always been a family favorite fast food restaurant for us.  I love their Chick-Fil-A Chicken Sandwich with pickles!   I love the chicken nugget’s because they are 100% real chicken for my son,   I love their salads and I even love all their dipping sauces.   I love how they always have a fresh flower on the table and the staff is always polite and refer to everything as “My Pleasure” If you can’t tell I  just love this place!!

  At first they were only in the malls but now they are all over the valley.   Which is awesome cause I really hate dragging a 2 year old into the mall just for some delicious lunch.   The point im getting at,  is you need to try this Copycat Chick-Fil-A Sandwich recipe and if you are unfortunate and don’t have one anywhere close to you then give this recipe a try.   Because it’s so close to the original it is amazing!

Grilled avocado cheddar tomato

There is nothing I love more then a grilled cheese sandwich!
Its always my go to meal when I just don’t feel like cooking dinner.
Grilled Avocado Cheddar Tomato
2 slices of your favorite bread, I used sourdough..yum yum
2 slices of cheese, I used american cheddar..I think it makes the sandwich more gooey

Lightly butter the outside of your bread. In a fry pan place the butter sided down and turn the heat onto medium.  Add a slice of cheese, your tomato and avocado.  Next add your other slice of cheese and top with your other slice of bread.  Heat until cheese is melted and lightly toasted on the outside.
My Notes:
My theory the more cheese the better, plus it helps keep you veggies in place.  I would also recommend dipping your sandwich in some Cholula hot sauce!  I also would mix it up a bit and add garlic mix to my butter.

Sloppy joes

These Sloppy Joe’s were my worst nightmare when I was growing up!!!  I hated sloppy joe’s and of course I was highly enforced on eating them.   Also when I was younger I was disgusted with the thought of eating meat.  So I didn’t like any meals my parents made for dinner for that matter.   Well let’s fast forward about 10-15 years.   Now im getting better at eating meat and of course my husbands family is huge meat eaters.  The first time I went camping with his entire family…..they brought a freezer for all the meat.   That’s right you heard me a freezer!  Can we say huge carnivore’s in this family!
So I have been trying to be a good wifey and make husband meals that involve meat.    I thought I would give these sloppy Joe’s another try and tried a different recipe then my mom always used.    Shockingly they were really good and I have added sloppy Joe’s to my monthly meal plan.  I found this awesome recipe from no on other then the amazing  Pioneer Women.  It is a little bit spicy if you have little ones, so just adjust the recipe a little bit for them.  But this recipe was FANTASTIC I actually enjoyed eating them so much better then the can sauce!

Chicken Avocado Sandwiches!

We love avocado’s at our house.  I only wish I was able to grow them where I live.  So I was wanting to make some chicken salad sandwiches for some work lunches and I had a few avocado’s that needed to be used. So I decided to make an avocado chicken salad.  At first it was just going to be some slices but in the end I decided to mash them up instead.

Avocado Chicken Salad

2-3 Chicken breasts, boiled and shredded
2 medium ripe avocado’s
1/4 red onion, diced to your liking
1/4 cup Mayo
1 tsp garlic powder
1/2 tsp salt
1/2 tsp cayenne pepper
2 dashes of pepper
Squirt of lime juice

Mix the last 9 ingredients together and taste to see if you need add anything else.  Then mix in chicken and spread over bread of your choice.  I lightly toasted a ciabatta bun and it was delicious

My notes:
I thought it needed a little more flavor, so I added a little bit of taco seasoning in and it tasted alot better.
