Pork Chili Verde

I love love Mexican food!  I especially love me some smothered bean and cheese burritos!  That is always my go to Mexican dish at any restaurants.  I have been on the hunt for quite some time to find the perfect Pork Chili Verde sauce!  Well we can all stop looking now…just in case you were looking!

We had some down time at work the other day and we were deciding on where we wanted to order for lunch.  We started talking about Mexican food and got on the talk of who had the best Pork Chili Verde smothered burritos.  Well ladies this day changed my life not only did I get to have one for lunch I also got one of the best homemade Pork Chili Verde recipes from my co-worker.  Well I put this recipe to the test and I completely fell in love with it.

3 ingredient Sweet Pulled Pork

Are you all melting like we are in Utah???   Right now the temps are right around 90 degrees if not hotter.   The very last thing I want to do is have the oven on with this heat.  So during the summer time we do a lot of barbecuing and crockpot meals.   So I thought let’s whip up some 3 ingredient Sweet Pulled Pork.   Its perfect for the summer because you don’t have to spend all day in a hot kitchen.
I saw this 3 Ingredient Sweet Pulled Pork  recipe going around on Pinterest and I just knew  we fall in love with so we needed to make it.  Plus only having 3 ingredients sold me.  I love making quick and easy meals and this one was just way to easy!!

ients in the crockpot and go about my day.

Cheddar ‘n’ Ham macaroni

We are HUGE macaroni and cheese fans!  I personally can’t eat the box brands anymore but I love some good homemade macaroni and cheese!  I had a lot and I mean a lot of Honey Baked Ham leftovers from the weekend family get together.  I didn’t want to waste that delicious ham so I started looking for quick recipes on line.  I found a few but of course I was missing a few ingredients and the baby was napping and I just wanted to get dinner started. So we had to get creative!  As I was searching the pantry for some of the ingredients I came across a can of Campbells Cheddar Cheese soup. I thought I would try it and if dinner was a complete fail then we can have cereal.
 
Needless to say, we didn’t eat cereal! 
I thought this quick meal was delicious.  I was convinced that dinner was NOT going to taste good.
 I even waited for the hubs to take his first bite to see is reaction…shhh don’t tell him.
 
 


Cheddar ‘n’ Ham Macaroni

2 cups cooked macaroni, I like mine to al dente
1 can Campbells Cheddar Cheese Soup
1/4 cup milk
1.5 cups cubed ham
1/4 tsp salt
1/2 cup bread crumbs, I used italian bread crumbs
2 Tbsp butter, melted

Cook noodles until tender and strain water.  Add in ham, salt, cheese soup and milk, stir until combined Try not to over stir so your noodles won’t get mushy.  Place in a greased 13×9 pan.  Spread evenly.  In a bowl melt butter, add in bread crumbs until coated.  Lightly sprinkle crumbs on top of macaroni and bake at 350 degrees for 20-25 minutes.

Easter Holiday & new recipe

Hope everyone had a great Easter!  It was my little mans 1st Easter. I wanted everything to be perfect and memorable.  The entire day was fun filled with visiting family and playing with all his new gifts from the Easter bunny. 
The only part that wasn’t perfect this Easter was some of my cooking. Have you ever made a recipe that didn’t turn out as great as you wanted?  Well that happened to me!  I was attempting to make Paula Deen Baked French Toast this recipe looked so good and I never tried baked french toast before. Well it was a complete fail!  I followed the recipe exactly but the bread stayed soggy and  I have texture issue with foods and soggy bread is one of them. So I was boring and made regular french toast instead.  Then I was going to make deviled eggs.  I boiled my eggs and was about to get them prepared.  I knew it was a bad sign when I had a hard time peeling the egg shell off.  Then I cut them open and they were not completely cooked all the way.  So long story short I wasted 2 dozen eggs this weekend.  At least the two main courses turned out well that night.  The ham and the dessert! They were awesome. Recipes to come so stay tuned!
Since we have a lot of leftover ham in the fridge I was trying to find a recipe to make.  I gave my husband a few options and this is the one he picked.  Im glad to because it was delicious!  I was a little skeptical at first but it will be added to my list of approved meals to make again. LOL

Cheddar Ranch Ham Braid

1.5 cups of cooked ham
1 cup chopped broccoli
1/2 chopped white onion
1.5 cups cheddar cheese
1 Tbsp parsley
1 tsp garlic powder
3 Tbsp Ranch Dressing
1 roll Pillsbury Crescent Rolls

Unroll crescent rolls and push seams together creating on big sheet of dough.  With a knife make 1″ wide strips towards the middle making sure to cut along the long sides.  Make sure you leave a 3″ wide strip down the center of the dough. Mix together the first 7 ingredients. Spread the mixture down the center of the dough.  Fold the side strips into the middle.  Bake at 350 for 12-15 minutes or until golden brown on top.  Serve with a little extra ranch on top.

My notes:
I would assemble it on a cookie sheet. Mine got destroyed moving it over to the cookie sheet.
