Chicken Fajita Pasta

Don’t you just hate when you have something planned for dinner and then at the last minute you are basically missing the main ingredient.    Yup, this happened the other night while I was making chicken fajitas.   I was making one of our favorite meals just to be missing tortillas!!    So I had to resort to something because everything else was now cooked and ready to be eaten.

Easy Chicken Alfredo

It’s 5 o’clock!  You just walk in the door from a long day at work!  The kids are hungry and grumpy and you have no idea what to make for dinner!!

Well ladies and Gentleman this Easy Chicken Alfredo recipe is the winner!  Its super easy, I can have dinner on the table in about 30 minutes.  Everykid loves pasta, chicken and I was even able to sneak in some veggies.   I love meals that are full of color, makes me happy knowing my family is getting a variety of vegtables.

The original Easy Chicken Alfredo recipe was for a slow cooker but I didn’t have the time.  So I simply modified it just a little bit and I think it turned out great.  It has now become a family favorite and even the leftovers are just as good as the day before.

Taco Stroganoff

I’m always looking for new recipes to try.  I get tired of making the same recipes over and over again and I think we can all agree on this.  So I started searching through some of my favorite blogs and I found this recipe from Julie’s Eats & Treats.  I knew instantly that I needed to give it try.  I loved how this Taco Stroganoff recipe was super easy to make and it was an added bonus that I already had all the ingredients on hand.

Lemon Broccoli Pasta with Chicken

I love pasta and chicken recipes!  This one is definitely on my list of favorite dishes.   The flavors were amazing together!  Plus this recipe seemed really fresh and light to me, It wasn’t heavy like alfredo dishes, which I really liked!

Chili Mac ‘n’ Cheese

There is nothing I enjoy better then a quick and easy dinner!  Especially when its late and the family is hungry.  Well this recipe is perfect.  Its beyond tasty and really quick to throw together.  The bonus part is that most of the ingredients I already had at home so it didn’t involve going to the store.

Chicken Ranch Pasta

Here is another fantastic recipe I got off of Pinterest.  I love when I find fast and quick recipes.  I also just so happened to have a rotisserie chicken sitting in the fridge that I needed to use up and it was a perfect!  If your like my family we love anything with ranch and we consider it an added bonus when we add bacon on top.  The bacon makes the perfect addition to this fantastic recipe.

Vegetarian Pad Thai

I honestly don’t eat enough Thai food, maybe its because there are not very many good restaurants in our area.  But when I can I devour my entire plate. 
When I came across this recipe it seemed so simple and easy.  
 
This is actually my second time attempting to make this recipe.  I’m still learning on how to cook these noodles.  The soaking process is a little more complicating then you would think.  They either didn’t work or they went mushy.  So don’t give up if your noodles don’t work the first time.
I also made the mistake of getting my noodles at the Asian market, who knew the directions wouldn’t be in English.  So it helps to get them at a local grocery store :)
 

Vegetarian Pad Thai

8 ounces flat rice noodles (Pad Thai noodles)
1/4 cup brown sugar
2 Tbsp soy sauce
1 Tbsp Sriracha or chili sauce
2 Tbsp water
1 Tbsp olive oil
1 tsp chopped serrano pepper
2 large eggs
1 garlic glove, minced
2 cups bean sprouts
1/4 cup green onion, chopped

Cook noodles according to package directions. In a bowl combine brown sugar, soy sauce, Sriracha, water and ginger mix together and set aside.  In a frying pan heat the oil and add the eggs and serrano pepper, cook until scrambled.  Add the noodles and sauce mixture, cook for 2 minutes.  Stir in bean sprouts and green onions and cook until thoroughly heated.

My Notes:
I thought this recipe was a little to sweet, next time I will lower the amount of brown sugar.  I might even add some chicken or tofu for some added flavor.

Cilantro Avacodo Linguine

We love avocado!!
My local mexican market had them on sale the other day 5 for .99 which is an awesome deal so I priced matched them at Walmart and stocked up.
I tend to keep them in the fridge, they seem to last longer and if I know I will be using one soon I place it on the counter to ripen. 
 
So since we had all these avocado’s I wanted to use them in some recipes.  Since its Meatless Monday I thought this would be the perfect the recipe for us to try!
 
 
 


Cilantro Avocado Linguine

2 large avocado, peeled
1 Tbsp lime juice, I used fresh
1 glove fresh garlic
1/4 fresh cilantro
1/2 tsp salt
dash of black pepper
1 package linguine noodles, I used whole Wheat

Start boiling your noodles,  I like mine to al dente.  In a food processor add in your avocado, lime juice, garlic, cilantro and salt pepper.  Mix until completely combined.  Strain noodles from water.  Add in the avocado mixture the noodles and stir until they are completely covered.
Serve immediately!

My Notes:
I thought this recipe was sort of dry, I’m wondering if I added a little cream or milk if it would help, but other then that it was great!

Cheddar ‘n’ Ham macaroni

We are HUGE macaroni and cheese fans!  I personally can’t eat the box brands anymore but I love some good homemade macaroni and cheese!  I had a lot and I mean a lot of Honey Baked Ham leftovers from the weekend family get together.  I didn’t want to waste that delicious ham so I started looking for quick recipes on line.  I found a few but of course I was missing a few ingredients and the baby was napping and I just wanted to get dinner started. So we had to get creative!  As I was searching the pantry for some of the ingredients I came across a can of Campbells Cheddar Cheese soup. I thought I would try it and if dinner was a complete fail then we can have cereal.
 
Needless to say, we didn’t eat cereal! 
I thought this quick meal was delicious.  I was convinced that dinner was NOT going to taste good.
 I even waited for the hubs to take his first bite to see is reaction…shhh don’t tell him.
 
 


Cheddar ‘n’ Ham Macaroni

2 cups cooked macaroni, I like mine to al dente
1 can Campbells Cheddar Cheese Soup
1/4 cup milk
1.5 cups cubed ham
1/4 tsp salt
1/2 cup bread crumbs, I used italian bread crumbs
2 Tbsp butter, melted

Cook noodles until tender and strain water.  Add in ham, salt, cheese soup and milk, stir until combined Try not to over stir so your noodles won’t get mushy.  Place in a greased 13×9 pan.  Spread evenly.  In a bowl melt butter, add in bread crumbs until coated.  Lightly sprinkle crumbs on top of macaroni and bake at 350 degrees for 20-25 minutes.
