3 ingredient Sweet Pulled Pork

Are you all melting like we are in Utah???   Right now the temps are right around 90 degrees if not hotter.   The very last thing I want to do is have the oven on with this heat.  So during the summer time we do a lot of barbecuing and crockpot meals.   So I thought let’s whip up some 3 ingredient Sweet Pulled Pork.   Its perfect for the summer because you don’t have to spend all day in a hot kitchen.
I saw this 3 Ingredient Sweet Pulled Pork  recipe going around on Pinterest and I just knew  we fall in love with so we needed to make it.  Plus only having 3 ingredients sold me.  I love making quick and easy meals and this one was just way to easy!!
It was was so nice to just to toss all the ingredients in the crockpot and go about my day.

3 Packet Pot Roast

I have seen this recipe floating around on Pinterest for the past few months.  A few weeks back Smiths was having a good sale on roast so I bought a few and froze them.  The night before I got a roast of the freezer to let thaw.  In the morning I mixed all the packets together and poured it over the roast turned on the crock pot and went on with my day.  When I got home that night and opened the door the aroma of dinner smelled AMAZING!
The flavors of the trio were amazing!
I was a little leery at first but dinner was a huge success and I think I will start making this recipe more often!

3 Packet Pot Roast

1 pot roast
1 packet ranch dressing mix
1 packet brown gravy mix
1 packet italian dressing mix
1 1/2 cups water

Mix all 3 mixes together with water.  Pour over pot roast.  Turn crockpot on to high and cook for 5-6 hours or on low for about 8-9 hours.
If you want to make gravy with the juice of the meat.  It is awesome flavor and is great to have with some mash potatoes.  I added the juice into a saucepan and let it come to a boil.  In a small cup I added 1/2 cup water and about 1-2 Tbsp of corn starch and mixed.  Then it starts to boil slowly stir in the water with corn starch and until desired thickness.

My notes:
I did add about half an onion.  I thought I was kind of salty so next time I might try to find to see if any of the packets come in reduced sodium.

Steak Strognauff



3-4 petite sirloin steaks, sliced thinly
1/2 medium onion, diced
1/2 cup beef broth
1 Tbsp Worcestershire sauce
1 can Cream of Mushroom Soup
1 cup sour cream
1 bag wide egg noodles, I used healthy Harvest Wheat noodles
Salt and Pepper to taste

Cut steak into thin strips.  Place in Crock pot and season with salt an pepper add onion.  In a separate bowl add soup, broth and Worcestershire sauce and mix.  Place on top of beef and lightly stir.  Cook on high for 3-4 hours or low 7-8 hours.  When about ready to serve add in Sour cream.  Serve on top of cooked egg noodles and enjoy.

My Notes:
I didn’t want to waste my beef broth for this recipe.  So I added the extra into an ice cube tray and froze then transferred into a Ziploc bag for a future recipe.

I personally think this recipe tastes better the next day!


Creamy Italian Chicken

I think this recipe is one of my all time favorite recipes!  There are many different versions of this recipe but I think this by far is the best one.  I love how you can toss it in the crock pot and go about your day.  The flavor combination is amazing and the cream cheese just makes it so creamy!  Everything is always better with cream cheese.

Creamy Italian Chicken

3-4 chicken breasts
2 cans cream of chicken soup
1 package cream cheese
2 packets of italian dressing seasoning
1/2 cup water
2 cups long grain rice or noodles

Place chicken into crockpot.   In a bowl add the soup, cream cheese, seasoning and water and mix well.   Pour into crockpot and stir.  Cover and cook for 3-4 hours on high until chicken is tender.  When almost done cook rice according to package.  Pour over rice or noodles which ever you prefer.

My Notes:
Frozen chicken breasts work just fine.  I like to cut my chicken into bite size bites but that’s totally up to you.

Crockpot Chicken Tortilla Soup

If you live in Utah you are probably wondering what happened to Spring!  We had a few nice and sunny days.  I was getting all giddy to finally play outside and soak in the sunshine!  Sadly it didn’t last long!  As I am sitting typing this im watching the snow flurries out my window!  Im tired of the cold!!  I need some warmth!
So we might just have to warm up tonight and make this soup!

Crockpot Chicken Tortilla Soup

2-3 Frozen chicken breasts
1 can diced tomatoes
1 can red enchilada sauce (I used Old El Paso)
1 medium onion, chopped
1 (4oz) can diced green chilies
1 tsp minced garlic
3 cans chicken broth
1 tsp cumin
1/4 tsp black pepper
1 (10oz) frozen corn
1 can black beans, rinsed

Place chicken, tomatoes, enchilada sauce, onion, green chilies and garlic into the crockpot.  Pour chicken broth, spices, corn and black beans on top and give a little stir. Cover and cook on low for 6-8 hours or on high for 3-4 hours.  Pull out chicken and shred and add back to crockpot.
Garnish with cheese, crushed tortilla chips, sour cream, avocados or whatever your family likes.

My Notes:
I think it need a little more flavor, next time I will add a little salsa.  I also think there was to much liquid, I will only add 2 cans broth and 1 cup water next time to see if that helps.

Santa Fe Chicken

I was at work the other day and I could smell this wonderful aroma from one of my co-workers heating up their lunch.  It smelled and looked fantastic.  So I of course had to have the recipe.  The best part is she cooked all in her crock pot .  I love cooking in my crock pot!!

3-4 Chicken breast-I used frozen
1 can corn-rinsed
1 can black beans-rinsed
1 can tomato sauce
1/2 cup water
1 1/2 cups salsa
1 Tbsp Garlic powder

Mix everything together in the crock pot.  Add the chicken on top and kind of push down a little so some of the sauce is covering the chicken.  Cook on low and cook 6-8 hours.  Serve over rice.

My Notes:
I think the frozen chicken was perfect, my chicken never dried out from over cooking.   I think this recipe was lacking some flavor so I think next time I will add a little bit of taco seasoning.  Maybe use mexi-corn instead of regular corn.  My husband suggested shredding the chicken.

Refried beans

I don’t know why it never occurred to me to never try and make my own refried beans.   I have never really enjoyed beans until lately and the canned version of refried beans don’t taste very good to me.  I like to make my own cause I know exactly what is in them, plus I don’t have the slimmy film the can version has.  Did I mention you can just throw it in the crock pot and forget about it!

Crockpot refried beans

3 cups hard pinto beans.
1/2 onion cut into big chunks
3 chicken bouillon cubes
1 Tbsp garlic powder
1 Tbsp onion salt

I first rinsed my beans.  Dump into crock pot and fill with water all the way to the top.  Add in seasonings and onion.  Set the crock pot on high and walk away.   Its that easy
I let mine cook on high for about 8 hours.  I never stirred it but I did check it to make sure there was always water inside.  If it gets low then add a little bit.
When done I strained the beans, keeping the liquid.  I dumped into a bowl and with my hand mixer and pureed it all together. Now you add the liquid to the beans to the desire consistency you want.

You can add green chilies if wanted.  I also made some bean and cheese burritos and froze them.  I also froze the refried beans in the freezer to pull out at anytime.  They are just as good as the first day I made them.



It has been a very cold winter where we live.  It seems like every day we get more and more snow.  I can’t wait for Spring so we can get back outside and enjoy some sunshine.  
My husband actually made this delicious meal for us, while I was at work.  I was quite impressed with his efforts and it was actually delicious!

1 lb ground beef
1 can black beans-rinsed
1 can red beans- rinsed
1 can diced tomatoes- I used the one with green chilis
1 cup frozen corn
1 can tomato sauce
2 Tbsp McCormick steak seasoning
1 Tbsp garlic powder
1 1/2 cups water
1/2 lime juice
Texas toast chili lime tortilla strips (found on the salad dressing isle)

Cook ground beef, I added a little minced onion.  Add the rest of the ingredients and cook in the crock pot on low for 4-6 hours.  I added cheese at the end and sprinkled with chili lime tortilla chips.
