Chicken Suizas Enchilada Casserole

I found this gem of recipe over at our Weekend Retreat Link Party.   This amazing Chicken Suizas Enchilada Casserole is from the wonderful Krista over at Joyful Healthy Eats.  I knew right away that I need to give it a try because well, for one it involves corn tortillas and who doesn’t love a quick dinner that you can make into a casserole.  She was on to something with this genius idea.

Nowadays  I’m all about convenience!  Between chasing my kid around, laundry, play dates and grocery shopping I need simple.  I often times make dinner during nap time and then I love being able to pull it out and place in the oven when its time to get dinner started.

This Chicken Suizas Enchilada Casserole is simple, fantastic and perfect for any night of the week.  I loved it and even the husband loved even though he hates corn tortillas.  Even my 1.5 year old took a few bites.

Each layer of corn tortilla is smothered in Suizas Enchilada Sauce and chicken and repeated  and smothered in cheese for the ultimate flavor with each bite.   To make it even better you can top it off with some sour cream, fresh pico de gallo and sliced avocado’s.

Chicken Suizas Enchilada Casserole

Recipe adapted and slightly modified from Joyful Healthy Eats
Ingredients
  • 1 pound chicken, cooked and shredded
  • 15 corn tortillas
  • 1 Tbsp oil
  • 1 cup onion, diced
  • 2 garlic cloves, diced
  • ¼ tsp coriander
  • ½ tsp cumin
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 cups chicken stock
  • 2- 4oz cans green chilies
  • 5 oz plain greek yogurt
  • 2 Tbsp flour/cornstarch
  • 1 cup mozzarella cheese, shredded
Instructions
  1. Cook and shred chicken. On medium heat cook onions in oil until translucent; next add garlic cloves. Add in coriander, cumin, salt and pepper. Next add in chicken stock and green chilies; bring to a boil and simmer for about 3-5 minutes. Add in greek yogurt and flour and whisk until combined. Let simmer for 5 additional minutes or until thickened. In a greased 13x9 add a little sauce to the bottom of the dish. Start layering your casserole with corn tortillas, suiza sauce and chicken and repeat. Bake at 350 for 25 minutes. Remove from oven and add mozzarella cheese and cook an additional 5 minutes.
  2. Serve with sour cream, pico de gallo and avocado.

Classic Funeral Potatoes

I have grown up on Funeral Potatoes also know outside of the state of Utah as Cheesy Hashbrown Casserole.  I’m still not sure as to why they call them Funeral Potatoes.   I assumed its because when some passed away in our church the members would always serve lunch to the family after the services and everyone brought these potatoes.  Nor do I want or need to have a funeral to make this classic casserole dish.

There are so many different varieties of Funeral Potatoes out there and everyone makes them a little bit different.    You can add crumbled corn flakes on top or use potato chips.  You can even add a variety of vegetables.  Or my favorite bacon!  You can even spice it up with some pepper jack cheese instead of cheddar.  Either way it doesn’t really matter, everyone will enjoy this recipe.

 This Classic Funeral Potato recipe we have been using in my family for a fairly long time.  To this day Grandma still always makes it better but that’s just how it goes.  Everything tastes better when you don’t have to cook.  Don’t you agree?

Classic Funeral Potatoes

Cheesy Hashbrown Casserole

I actually had to use Lay’s Original potatoes chips for my recipes this time.  I didn’t realize I didn’t have any Corn Flakes.   Like I said you couldn’t even tell a difference it was still just as tasty.

Ingredients
  • 2 packages frozen hash browns, thawed
  • 2 cups sour cream
  • 1 can Cream of Chicken soup
  • ½ cup butter, melted
  • 1 tsp salt
  • ¼ cup green onion, chopped
  • 2 cups cheddar cheese, shredded
  • 1 cup corn flakes, crushed
Instructions
  1. In a sprayed 13x9 casserole dish, lay hash browns out. In a bowl combine sour cream, Cream of Chicken soup, salt, cheese and green onion. Stir until well combined. Pour sauce on top of potatoes and gently mix into potatoes. In a small bowl melt butter, add to the crushed corn flakes. Sprinkle corn flakes on top of casserole. Bake at 350 degrees for 1 hour.

Easy Chicken Alfredo

It’s 5 o’clock!  You just walk in the door from a long day at work!  The kids are hungry and grumpy and you have no idea what to make for dinner!!

Well ladies and Gentleman this Easy Chicken Alfredo recipe is the winner!  Its super easy, I can have dinner on the table in about 30 minutes.  Everykid loves pasta, chicken and I was even able to sneak in some veggies.   I love meals that are full of color, makes me happy knowing my family is getting a variety of vegtables.

The original Easy Chicken Alfredo recipe was for a slow cooker but I didn’t have the time.  So I simply modified it just a little bit and I think it turned out great.  It has now become a family favorite and even the leftovers are just as good as the day before.

Cheesy Tater Tot Casserole

I remember the first time I tried Tater Tot Casserole.  I think I was probably 10 years old or so.  I thought it was the most disgusting meal my mom had ever made.  The name alone turned me away. So of course I have always had this image of gross Tater Tot casserole in my head.  Telling myself I will never ever eat this again.

 Now let’s jump forward 15 years, I saw this recipe on Campbell’s Kitchen and I thought I will give it one more try.  Because let’s face it, there were a lot of meals that I didn’t like when I was younger.  I have learned that I missed out on a lot of really good foods because I was to picky to give them a try.  So, I thought we are going to make this so I can once and for all say if I do or do not like Tater Tot Casserole.

Well the verdict, I did actually like it.  I don’t think I will make every week but I still liked and so did the husband.  So we will be adding this recipe into my book of approvals!

Taco Stroganoff

I’m always looking for new recipes to try.  I get tired of making the same recipes over and over again and I think we can all agree on this.  So I started searching through some of my favorite blogs and I found this recipe from Julie’s Eats & Treats.  I knew instantly that I needed to give it try.  I loved how this Taco Stroganoff recipe was super easy to make and it was an added bonus that I already had all the ingredients on hand.

Hashbrown & Egg Breakfast Casserole

There is nothing I love more than a delicious breakfast!!

 I wish I could make a nice and yummy breakfast for my family every morning.   But then reality kicks in and I realize im not superwoman.  On the days I work im up at 4am, drop the baby off to my mom by 5:20 and running to the time clock at 5:59.  As for my husband he is out the door at 6:15.  Plus at 4:30 in the morning the last thing im thinking about is breakfast.  So I really only have the weekends to make a big big breakfast.

One of the best ways to make breakfast, is to make it casserole style.  I love casserole dishes because they are easy to throw together, every one can all eat at the same time and you can even make it the night before and toss it in the oven in the morning while you play with the kiddos.

So I always cherish those mornings when we are all able to sleep in…..oh wait who am I kidding!

How many of you like to have breakfast for dinner?

We sure do!  We probably do at least once a month when we know we are going to have a late night.   So this is great idea to make ahead of time and simply just throw in the oven.

Also I never said this recipe was healthy but trust me I think its worth ALL the calories!!

Chili Mac ‘n’ Cheese

There is nothing I enjoy better then a quick and easy dinner!  Especially when its late and the family is hungry.  Well this recipe is perfect.  Its beyond tasty and really quick to throw together.  The bonus part is that most of the ingredients I already had at home so it didn’t involve going to the store.

Chicken Ranch Pasta

Here is another fantastic recipe I got off of Pinterest.  I love when I find fast and quick recipes.  I also just so happened to have a rotisserie chicken sitting in the fridge that I needed to use up and it was a perfect!  If your like my family we love anything with ranch and we consider it an added bonus when we add bacon on top.  The bacon makes the perfect addition to this fantastic recipe.
