Easy DIY Artisan Bread

Im one of the biggest carb lovers out there!  I love my pasta, grains and especially I love bread!

Plus to top it off, I love me a good artisan bread!   I can eat the entire to loaf to myself…actually I think I did!

I know some people are scared to actually make bread…I was one of them.   But I love this recipe because it so beyond easy to make.  It definately is a different recipe with not letting the yeast and water grow together but somehow it works and makes a lovely slice of bread.

Ain’t she pretty…I still can’t believe that I made it!

Chocolate Chip Pumpkin Bread

I love Fall!  I don’t know if it has to do with the cooler temperatures, the leaves changing or the amount of pumpkin dishes I get to create.  But with all seriousness this is by far the best pumpkin bread I have ever made or even tried!!  I’m not

going to lie, im pretty sure I ate the entire loaf to myself!!  It was so moist and the pumpkin and chocolate ratio was perfect.

Double Chocolate Zucchini Bread

I’m sure every one has an abundance of zucchini like I do!  I love zucchini bread but when I saw this recipe floating around Pinterest I knew I needed to give it a try…because everything is better with a little bit of chocolate or a lot of chocolate!

Double Chocolate Zucchini Bread

Ingredients
  • 2 eggs
  • ⅓ cup honey
  • ½ cup oil
  • ½ cup brown sugar
  • 1 tsp vanilla
  • 1 tsp salt
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ⅓ cup cocoa
  • 1⅔ cup flour
  • 2 cups grated zucchini, with skin
  • 1¼ cup chocolate chips
Instructions
  1. In a mixing bowl add the first 10 ingredients together, using a hand mixer until well combined. Stir in by hand the zucchini and chocolate chips. Place in a well greased loaf pan and bake at 350 for about 65-70 minutes. Test with a toothpick to make sure bread is completely done. Let cool for 15 minutes then remove from loaf pan to continue cooling. You can also garnish the top a few more added chocolate chips.

Navajo Tacos with Homemade Scones

We have been making this recipe for as long as I can remember.  It was always my favorite growing up and I loved to help my dad make them.
 
You can use this recipe to make dinner or you can just use the scone recipe for breakfast scones.
 


Navajo Tacos with Homemade Scones

1 pound hamburger
Cheese
Tomatoes, we used my Pico De Gallo
Lettuce
Avocado
Ranch Dressing, optional
Chili, optional

Cook hamburger like you would make taco meat.  Cook the scones according to directions.
When done stack you Navajo taco with your favorite toppings.
Everyone in my family likes them different.  I like mine like the picture were my husband likes chili and cheese on his.  So you can really mix it up and try all new kinds of navajo tacos.

Homemade Cinnamon Rolls

There is nothing better then a  Homemade Cinnamon Roll baking away in your kitchen!    The aroma alone makes me want to devour the entire pan to myself.    I don’t make Cinnamon Rolls very often but when I do make them they are gone way to fast!!
The great thing about this recipe is it is so easy to make.  So I don’t want anyone to be turned away thinking this recipe sounds to complicated to make.   Making any kind of bread is really quite simple and the end product is totally worth giving it a try.
  To me the hardest part is the waiting for the dough to rise.

Easy Homemade Blueberry Muffins

With me working every other weekend and when we actually have a weekend home together I like to make breakfast.  I usually make a big breakfast but on this day I wanted something delicious and quick! 
When certain fruits come on sale for a great price I like to buy them and freeze them.  I think they taste better then the frozen kind you buy at the store.  Since I needed to start using up my stash of frozen fruit I settled on making muffins.  
Don’t get me wrong Betty Crocker can make a nice mix but I wanted to make the real deal.  This recipe was fantastic!  Me & the hubby loved them.  I wish I had more berries now so I could make some tomorrow!
 
 


 Easy Homemade Blueberry Muffins
Recipe makes 8 muffins

1 1/2 cups flour
3/4 cup sugar, plus a 1 tsp for muffin tops
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 milk
1 1/2 tsp vanilla extract
1 cup blueberries-Fresh or Frozen, not thawed

Preheat oven to 400 degrees. Combine flour, sugar, baking powder, and salt in bowl and mix well.  In a separate bowl add oil, egg, milk and vanilla.  Add liquid mixture to dry ingredients.  Mixing with a fork stir just until combined.  Add in blueberries and lightly stir.  Place batter in muffin tins and sprinkle remaining sugar on the top of each muffin and bake for 20 minutes.

Cinnamon Streusel Dessert Pizza

I love pizza and I love dessert!  That’s why I loved this recipe!
 





Cinnamon Streusel Dessert Pizza

Homemade or store bought pizza dough
1 TBSP butter, melted
Cinnamon (to sprinkle)

PIZZA DOUGH
1 cup and 2 Tbsp hot water
2 1/2 tsp yeast
1 tsp sugar
3 cups flour
2 tsp salt

Mix water, yeast and sugar together in bowl and let sit for 5 minutes or until nice and foamy.  Slowly add in flour 1 cup at time and salt in between.  Knead with mixer or with hands for a few minutes.   Let rest for 20 minutes or until it doubles in size.  Form to the size of pizza you are wanting.
(Makes 1 large pizza with a thicker crust)


STREUSEL
1/2 cup plus 1/3 cups all-purpose flour
1/3 cup white sugar
1/4 cup brown sugar
2 TBSP vegetable shortening
2 TBSP oil
 

ICING
1 cup powdered sugar
1 TBSP milk
1/2 tsp. vanilla
 
Preheat oven to 460° F. Mix together streusel ingredients with a fork then side aside.
 
To make pizza, pat dough into a 12 inch pizza pan that has been sprayed with oil.  Perforate pizza dough with a fork (this keeps bubbles from forming), then brush with 1 TBSP melted butter. Sprinkle cinnamon all around buttered crust. Top pizza crust with streusel mix, crumbling in your hands to make nice pea sized chunks.
 
Bake at 460° F for 8 to 9 minutes depending on the thickness of the pizza.  Mix icing ingredients until it is of a drizzle consistency. If it is too thick, then thin with a small amount of milk until you have reached your desired thinness.
 
When finished baking, top with icing in a circular pinwheel pattern. Cut up into triangles and enjoy.

MY NOTES
I love my pizza stone, so that’s how I ended up cooking mine my pizza. The streusel mix makes alot so if your making one pizza I would half it, I wasted alot!  As for the icing 1 Tbsp milk was not enough to mix together so I added more, was not a fan of the flavor so I added 1 Tbsp of cream cheese and it  tasted much better!  Try not to over cook!

 

Bananas ‘n’ Cream Bundt Cake

I love banana bread!  So since it was crappy weather and I had some bananas starting to get really ripe.  I decided to make some bread.  I thought it would be fun to actually bake using my bundt pan. 
 It’s confession time, I have actually never baked using my bundt pan!
I know its pretty lame. So now I can finally say I have used it and it was worth the purchase.
I think its a fun twist then the usual bread loaf pan.
 

Bananas ‘n’ Cream Bundt Cake
Adapted from Taste of Home

1/3 cup shortening
1 1/4 cups sugar
2 eggs
1 tsp vanilla
1 1/4 cups mashed ripe bananas, about 3 medium
2 cups flour
1 1/4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup sour cream
3/4 cup walnuts, optional

In a large bowl, cream shortening and sugar until light and fluffy.  Add the eggs, one at a time beating well together.  Add vanilla.  Add bananas and mix well. In a separate bowl combine flour, baking powder, baking soda, and salt.  Add to the creamed mixture alternating with the sour cream.  Stir in walnuts.
Pour into a greased and floured bundt pan.  Bake at 350 degrees for 50-55 minutes.  Let cool for 10 minutes before tipping over to cool completely.

My Notes:
This recipe was so good I would not make any adjustments.

Homemade Bread Sticks

Who honestly doesn’t like bread sticks?  I personally could just eat bread all day every day and be completely satisfied!
I got this recipe from on of my really good friend!  Ever since I have made them I have been wanting to make them again and again.  These sort of remind me Little Caesars bread sticks and Olive Garden. These would compliment any meal.
The best part, this recipe is super easy!!  I had them made and baked under an hour!
 
 


Homemade Bread Sticks

1 1/2 cups warm water
2 Tbsp sugar
1 Tbsp yeast
Mix together in a large bowl.  Let sit for 5 minutes until yeast is bubbly.
Then add:
3 1/2 cups flour
1 tsp salt
Knead together and let rest 10 minutes.  Roll dough out on a floured surface.  Melt about 2 Tbsp butter and spread across dough. Sprinkle with garlic salt and parmesan cheese.  Fold dough in half.  Cut into 1″ strips. Grab a strip and twist together.  Place on a sprayed baking sheet. Let rest for another 15 minutes.  Bake at 350 for 20 minutes.  Once they are done melt a little extra butter and brush on top.  Sprinkle again with garlic salt and parmesan cheese.

Hope your family enjoys them as much as we do.
 
My Notes:
I occasionally with sprinkle the McCormick Salad Supreme Seasoning instead of garlic salt. It is just as yummy!

Iggy’s Copcat Sweet Chili Water

I enjoying going out to dinner more often then I should.  I really enjoy Iggy’s because they have a wide variety of foods to choose and everyone is happy.  The best part of Iggy’s is their sweet chili water.  I basically dunk everything in that sauce, I would drink it if I could.  So I got to looking and came across this sauce.  It’s not the exact same but I think it is pretty close in comparison.
 
When I decided I want to try to make this, I wanted to test out my bread making skills as well.  I have never  made french bread before.  So I thought I would give this recipe a try and I was quite surprised it turned out pretty good.  I adapted this recipe from Deals to Meals.  I love her website and her meals always seem tasty and look great.
I actually halved her recipe, because I knew it would make a lot of bread for just two people to eat! I made this bread in my Kitchen Aid with the dough hook. 
 
French Bread
1 1/4 cup warm water
1 Tbsp Yeast- I used rapid Rise
1 1/2 Tbsp sugar
1 Tbsp White Vinegar
Mix together and let sit for 5 minutes or until foamy on top
 
Next add:
1/2 tbsp salt
2 1/2 Tbsp oil
3 cups flour-I used bread flour but all-purpose will be just fine. Add a little more flour if the dough is sticky to touch
Mix all together and knead for 5 minutes
 When your done kneading, let rest in the bowl for 30 minutes
 
 After 30 minutes I floured my counter and kneaded the bread for a few minutes.  Making 1 big rectangular dough ball
 
 I divided my dough into 2 equal parts.  You can make 1 big loaf or a 2 small loafs
 
 Form into french bread loaves and cut the diagonally slats on top
 
 Let rest about 10 minutes or until it doubles in size
 
 Bake at 350 for 27 minutes.  I coated mine in melted butter.
My melted butter had garlic powder, onion salt, garlic salt and parsley mixed in
 
 
  Sweet Chili Water
1 tsp minced garlic
1-2 red jalapeno peppers stems and seeded
3 Tbsp Peanut Oil
2 tsp Chili Powder
3/4 sugar
1/2 water Rice Wine Vinegar
1/2 cup water
1/4 salt
Mix all together in food processor until combined.  Put sauce in a pan and bring to a boil.
While that is boiling combine
1 Tbsp Cornstarch with 2 Tbsp water
When sauce is boiling add in cornstarch and boil until it thickens.
 
 Hope you enjoy it as much as we did!
 

My notes:
I wish with the bread I made it into 4 small loaves instead.  I was trying to make small loaves of bread, a little disappointed they got as big as they did.
On the sauce I think I would add an extra jalapeno to make it a little bit more spicy and maybe not as much vinegar.
