We haven’t really had a Winter at all this year in Utah. We had a few little snow storms but nothing compared to our normal winters. Last week we actually had a cold spell in the middle April, which is odd. I think we even got about an inch of snow. Just enough of a light dusting to cover my flowers.
With our one day of chilly weather I decided on making our family favorite quick and easy Taco Soup for dinner. It has always been a family favorite recipe and its always great to throw together at the last minute. It is fully loaded with taco flavor. Enjoy this Taco soup with a spoon or scoop it up with some tortilla chips.
The best thing about this soup, all the ingredients are pretty much in your pantry. Making the convenience even better to make at last minute.
- 1 pound hamburger
- 1 can chicken broth
- 1 can black beans, rinsed
- 1 can red beans, rinsed
- 1 can diced tomatoes
- 1 cup corn
- 2 cups water
- ¼ cup chopped onion
- 1.5 Tbsp Taco seasoning
- Cook hamburger and onion together until no longer pink, draining fat. In large pot or crock pot add all other ingredients together. Let simmer together for 30 minutes or on low for 4 hours in crock pot.
- Top with sour cream, cheddar cheese, green onion, cilantro and tortilla chips.
