Sweet Firecracker Chicken

This dish is Panda Express inspired!  I have never really been a fan of Panda Express until they got their Sweet Fire-Cracker Chicken.  It is has became my all time favorite dish that they offer.  So what is a girl to do, start looking around on the internet to find an awesome copy-cat recipe.  

There were a few different recipes on line but I choose this particular one because it sounded the most like the original recipe.  This was actually my second time making this Sweet Fire-Cracker Chicken.   The first time we had it was great.  I even brought some of left overs to my parents house for them to try and my dad actually thought it came from the restaurant.  It was pretty tasty but I decided to make a few alterations to the original recipe I found and I think it tastes so much better.  It’s still really similar

Sweet asian chicken

Sweet Fire-Cracker Chicken

  • 2 chicken breast, cut into think chunks
  • salt and pepper to taste
  • 1¾ cup flour
  • 2 eggs, beaten
  • ½ cup oil
  • 1 can pineapple chunks, drained
  • 1 red bell pepper, cut into 1" chunks
  • ½ onion, cut into 1" chunks
Sweet Fire Sauce
  • ⅔ cup sugar
  • 1 cup water
  • 6 Tbsp white vinegar
  • 1 tsp red pepper flakes
  • 2 cloves garlic, minced
  • dash of salt
  • 3 Tbsp cornstarch
  • 4 Tbsp water
  1. Cut chicken into 1" chunks, sprinkle with salt and pepper. In a Ziploc bag add ¾ cup flour and add chicken and shake until coated. In 2 separate plates add the remaining 1 cup flour on one and the beaten eggs on the other. Dip coated chicken in the egg then into the flour. Cook in oil until chicken is cooked, turning over to cook both sides. Probably have to do a few batches.
  2. In a sauce pan add the sugar, water, vinegar, salt, garlic and red pepper flakes. Cook on medium heat until sugar is dissolved and its at a low boil. In a small bowl add the water and cornstarch stir into sauce until combined and thicken.
  3. Dump remaining oil, reserving about 1 Tablespoon. Add in peppers, onion and pineapple and cook for 1-2 minutes. Add in chicken and sauce and even coat.
  4. Serve with rice and enjoy

  3. Hi there! I’m stopping in from Let’s Get Real today. I have never had the Panda Express version, but this certainly does look delicious. Sweet and spicy are such a great combination.
