Stuffed Baby Red Potatoes

Me and my mom always attend the Taste of Home Cooking School.   Its never anything huge and exciting but its something we have been doing together for a few years now and we are always looking forward to going.  She made these stuffed baby red potatoes and I knew I just needed to try them. 
They were fantastic!  They were absolutely delicious.

Stuffed baby red potatoes
adapted from Taste Of Home

24 small red potatoes
1/4 cup butter, cubed
1/2 cup shredded parmessan Cheese
1/2 cup crumbled bacon
2/3 cup sour cream
1 egg
1/2 tsp salt
1/2 tsp pepper
1/8 tsp paprika

Clean potatoes and place in pot with boiling water.  Cook just until tender, about 20 minutes.   Drain potatoes from water and let cool.  Once cooled cut off a little bit of the bottoms so potatoes are more stable.  Next cut a little off the tops and with spoon gently scoop out the inside of the potatoes and place in separate bowl.  Next mash the potato pulp with the butter. Add in the the cheese,(saving about 2 Tbsp for the tops), sour cream, egg, salt and pepper.  Mix together and stuff back into the potatoes.  Top with remaining cheese and bacon. Sprinkle with paprika.  Place potatoes on a greased cookie sheet and bake at 375 for 12-18 minutes.

My Notes:
I found that a spoon was really hard to remove the potato pulp with a spoon.  So I actually used a 1/2 tsp to scoop out the potato.  I didn’t completely remove all the inside of the potato, I just scooped out out a little bit.
