Pumpkin Ale Cupcakes with Streusel Cream Cheese Frosting

My work is always having pot lucks!  Working at a hospital we don’t really have the option to leave and go get a bite to eat.  You also get tired of eating cafeteria food as well.  So this leads to Potlucks, and at my work we always have awesome potlucks.  We recently had one and I decided to bring the dessert.  Since its the time of year for pumpkin everything I decided to get on line and try to find a recipe that screamed out to me.  I just so happened to come across this recipe.

My work loved this recipe and I keep getting asked to make it again and bring into work.


Pumpkin Ale Cupcakes with Streusel Cream Cheese Frosting

  • 1 yellow cake mix
  • 1 cup canned pumpkin
  • ¾ cup pumpkin ale
  • 2 eggs
  • ½ tsp cinnamon
Cream Cheese Frosting
  • 2 packages cream cheese, softened
  • ½ cup unsalted butter, softened
  • 1 tsp vanilla
  • 4 cups powdered sugar
  • 1 cup all-purpose flour
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • 6 Tbsp unsalted butter, softened
  • ½ cup nuts, chopped
  1. In a large mixing bowl add cake mix, pumpkin, ale, eggs and cinnamon; stirring until combined. Place batter in 24 lined cupcake pans. Bake at 350 for 20-23 minutes. Let cool
  2. In a small bowl add the streusel ingredients together with a pastry blender or fork, leaving it slightly clumpy. Line a cookie sheet with foil. Lay streusel out and bake at 350 for 20 minutes, gently stirring half way through baking time.
  3. In a medium sized bowl add the cream cheese, butter vanilla and powdered sugar; until well combined.
  4. Frost cupcakes when completely cooled, with as much frosting as you like. Sprinkle streusel on top.
  5. Keep cupcakes chilled!
This was a great recipe but the frosting was way to much for us. I would definitely half it along with the streusel.
