My family and I love making pizza at home. However, I have to say that I’m not always prepared, or for that matter very skilled, at home made dough making. The good news is that I’ve discovered Naan bread at my local grocery store. It’s very similar to a flat bread or pita, and works wonderfully when you would love a quick pizza!

You can top your Naan about any way you love to eat pizza. For this delicious pie, I’ve added pesto sauce, along with roasted red peppers and shrimp for a delicious weeknight dinner. Along with the mozzarella, and a bit of Parmesan, I added a few shakes of red pepper flakes for a bit of spice – its the perfect seasoning for this restaurant quality pizza!

Here’s how this quick, easy and delicious pizza comes together:

Pesto Naan Pizza with Shrimp

Ingredients:

1 8-10″ Naan bread

2 Tbsp. prepared Pesto sauce

2 Tbsp. sliced roasted red pepper (jarred)

5-7 uncooked, peeled & de-veined shrimp

1/4 c. mozzarella cheese

1/4 c. Parmesan cheese

Optional: red pepper flakes

Preheat oven to 425 degrees. On the Naan bread, evenly spread the Pesto sauce, add the red peppers, uncooked shrimp, and cheeses. Cook on upper rack of oven for 10-13 minutes or until cheese is a golden brown and shrimp is cooked to pink. Slice into quarters, and serve with the red pepper flakes. Add any additional Parmesan cheese if desired.

Serves 1-2.
