Kraft Fresh Take Southwest Three Cheese Enchilada’s

With Easter right around the corner we always have a big family get together the day before Easter.   We have our traditional family Easter egg hunt and dying of the eggs.   We like to keep our dinner simple and easy so we have more time to spend with family and enjoying the festivities of the holiday.    These enchiladas are perfect.  You can make them hours in advance and while you are out on the hunt for the eggs, dinner is in the oven cooking away.

We have all heard of  Kraft…right?   Well have you heard of Kraft Fresh Take?  These conveniently packaged meals are located at Walmart in the refrigerator isle next to cheese.   These perfectly proportion Fresh Take Meal Kits are perfect for the busy family.    In 3 simple steps you could have dinner ready.  All you need is a Fresh Take Kit, Chicken and a baking dish.   Right now through the month of  April, Walmart is offering you $1 Off Chicken when you buy Fresh Take Printable coupon.  Which is a great deal and im always on the look out to save my family a few extra dollars.


With my #FreshTake meal I decided I wanted to try something new.    I have been wanting Mexican food all week and decide I will use my Fresh Take kit and make Southwest Three Cheese Chicken Enchilada’s.


To get this recipe started I used my coupon at Walmart and purchased my chicken and my Fresh Take.    I boiled my chicken with a dash of cumin and shredded my chicken.  In a mixing bowl I added my chicken, black beans, cream cheese and my Fresh Take Southwest Three Cheese.


Mix all your ingredients together with a fork.


Spread mixture on top of tortillas.   Roll tortillas up and place in baking dish.


I like to cook my enchiladas for about 15 minutes prior to adding sauce.  I like my enchilada’s to be slightly crunchy and not soggy.   Add enchilada sauce on top and I used some of  my cheese from Fresh Take to top it off.   Baking for another 10 minutes.


Remove from oven when cheese and sauce are sizzling.   Serve with sour cream on top.


Kraft Fresh Take Southwest Three Cheese Enchilada’s

  • 1 Kraft Fresh Take Southwest Three Cheese, reserving ¼ of cheese
  • 2-3 chicken breasts
  • 1 Tbsp cumin, optional
  • 1 package tortillas
  • 1 Can black beans, rinsed and drained
  • ½ package cream cheese
  • 1 Can Enchilada Sauce
  1. Boil chicken with cumin until done; shred chicken. In a large bowl combine chicken, Kraft Fresh Take, black beans and cream cheese, stir until well combined. Spread about ½ cup of mixture on tortilla and roll up. Place in a sprayed, 13x9 baking dish. Cook for about 15 minutes. Remove from oven and add enchilada sauce and remaining cheese. Return to oven and cook another 15 minutes. Serve immediately.
