So, I have to say that I’ve finally jumped on the kale bandwagon. It has taken me a while to try it out and cook with this uber nutritious leafy green. However, I’ve come to really enjoy the flavors and texture it adds to just about anything you’re making. The other day I tried adding it to a smoothie and wow – consider my socks knocked off!!
When the kale is paired with fruits like banana, kiwi and pineapple, it creates the most amazing smoothie! The flavors are primarily sweet and tropical from the banana and pineapple, and with a little bit of orange juice, you don’t need any additional sweeteners. In keeping with the “green machine” theme, I’ve topped the smoothie with nutritious and delicious pistachios for a complimentary crunch!
The nutritional benefits of this smoothie are pretty spectacular! It’s loaded with potassium, vitamin C and B6, along with a good amount of fiber and protein helping to keep you fuller, longer.
This smoothie is the perfect mid-day snack, great to refuel post-workout, and a fantastic way to tide you over to your next meal. It would also make a fantastic breakfast, getting your day started on the right track.
Here’s the easy, delicious recipe for this Green Machine Power Smoothie:
- ½ c. fresh or frozen pineapple
- ½ banana
- 1 kiwi, peeled
- 2 handfuls (approximately 1 c.) of kale, rinsed and removed of stems
- ½ c. plain Greek yogurt
- ½ c. orange juice
- chopped pistachios (optional)
- In a blender, combine all ingredients. Blend for about 1 minute or until smoothe. Pour into a glass and top with the chopped pistachios. Enjoy right away.
