It’s Summer time, which means we are always on the go enjoying the sunshine.   We recently went on a camping trip with some of our family.  I love going camping but it is a lot of work to get there.  Between laundry, packing, grocery shopping I am tired.  When we finally make it to camping I like to keep our meals simple, tasty and easy!

While I was grocery shopping at Walmart for our camping trip I came across these NEW Quaker® Real Medleys® Yogurt Cups.   I liked the convenience of these cups and to be honest I have never seen anything like this before.  I was intrigued and knowing that all I needed to do was add cold milk, stir and eat!

Now reality has set back in and its back to work on Monday…boo!  But I have still enjoyed having my Quaker® Real Medleys® Yogurt Cups.  With the kids out of school I still like to keep breakfast simple and convenient.   I have always been a big fan of breakfast, it’s actually one of my favorite meals.  So I decided to pair up our new yogurt cups with my favorite Egg Casserole.  Its is simple and easy to make and it’s perfect to warm up all weekend long.

My Egg Casserole is so simple and easy to make.

To get started you need to melt butter with flour, salt and pepper

Once it’s bubbly add in milk and cheese. Stirring until cheese is melted and set aside

In another sauce pan melt butter.  Cook with ham and green onions until tender (about 5 minutes)  While its cooking scramble your eggs

Add egg mixture to ham and green onions.

Cook until just barely firm.

Add in cheese sauce, and stir until combined

Add mixture into a 13×9 pan.   Cover with bread crumbs and enjoy

This Egg Casserole is perfect for any occasion.
Serves: 10 servings
  • 2 Tbsp butter
  • 2 Tbsp flour
  • ½ tsp salt
  • ⅛ tsp pepper
  • 2 cups milk
  • 1 cup shredded cheese
  • 1 cup ham cubes
  • ¼ cup green onions, chopped
  • 3 Tbsp butter
  • 12 eggs, beaten
  • 2 Tbsp milk
  • 2¼ cup soft bread crumbs (about 5 slices)
  • 3 Tbsp butter, melted
  1. Melt 2 Tbsp butter, blend in flour, salt and pepper. Stir to thicken. Add 2 cups milk and cheese. Stir until melted. Set aside
  2. In a fry pan melt 3 Tbsp butter with ham and green onions. Cook about 5 minutes until tender. Add in beaten eggs and cook until slightly firm. Remove from heat and add in cheese sauce. Place in a lightly sprayed 13x9 casserole dish.
  3. With a food processor add bread slices and melted butter together until crumbly. Spread evenly on top of casserole.
  4. Bake at 350 degrees for 35 minutes

So next time you are at Walmart make you check out the cereal aisle and take these home.
