Fall is here and I am loving every second of it! I’m sitting here now on my patio with a lite Fall breeze and the sun is shining even though its probably only 68 degrees right now. The kids are in school and the baby is napping and its just so peaceful and quiet! I love this time of year because it gets me in the mood for soups! I came across a recipe I made a long time ago and decided to give a few little quirks to fit my family and it turned out amazing. I LOVED this Chicken and Wild Rice soup so much and even my kids devoured it!

We were having a play date with our neighbor and I knew right away what I wanted to make the kiddos for lunch. I love simple and easy recipes that are protein powdered snacking and is kid friendly and I know they will eat.
To start I grabbed my Tyson® Chicken Nuggets and baked them in the oven according to package.
While the chicken was cooking I started to cook our spaghetti noodles. Any kind of noodles will work, but son likes to slurp his noodles.
When the noodles are done I added some spaghetti sauce.
Each kid got a fun dinosaur on their plate. Now add some mozzarella cheese on top. You know how picky eaters are, one wants cheese and other doesn’t…its the story of my life! But I personally recommend the cheese!
And of course my son goes right for Trex’s head!

I’m going to be completely honest here, I have never ever tried a Tyson Cornish Hen! I know it is a shocker but it just something I didn’t have growing up or I was in my phase of I don’t eat meat and no you will not make me try it. But getting back to the point i’m a new fan of these Tyson Cornish Hens. I like how they are smaller then a normal chicken and alot easier to deal with plus they are full of flavor and tender. With the help of Kikkoman we have made the perfect chicken Seasoning for these Cornish hens!
I have had this new obsession with Buffalo flavor anything! I never really cared much for the bufflao flavor when I was younger but now im loving it! Last week I was not in the mood to cook anything for dinner. I know big shocker!! Well I came up with this quick Baked Buffalo Chicken Taquitos. The recipe was super fast to throw toghether and it will become a regular in our house.
I found this gem of recipe over at our Weekend Retreat Link Party. This amazing Chicken Suizas Enchilada Casserole is from the wonderful Krista over at Joyful Healthy Eats. I knew right away that I need to give it a try because well, for one it involves corn tortillas and who doesn’t love a quick dinner that you can make into a casserole. She was on to something with this genius idea.
Nowadays I’m all about convenience! Between chasing my kid around, laundry, play dates and grocery shopping I need simple. I often times make dinner during nap time and then I love being able to pull it out and place in the oven when its time to get dinner started.
This Chicken Suizas Enchilada Casserole is simple, fantastic and perfect for any night of the week. I loved it and even the husband loved even though he hates corn tortillas. Even my 1.5 year old took a few bites.
Each layer of corn tortilla is smothered in Suizas Enchilada Sauce and chicken and repeated and smothered in cheese for the ultimate flavor with each bite. To make it even better you can top it off with some sour cream, fresh pico de gallo and sliced avocado’s.
- 1 pound chicken, cooked and shredded
- 15 corn tortillas
- 1 Tbsp oil
- 1 cup onion, diced
- 2 garlic cloves, diced
- ¼ tsp coriander
- ½ tsp cumin
- ¼ tsp salt
- ¼ tsp pepper
- 3 cups chicken stock
- 2- 4oz cans green chilies
- 5 oz plain greek yogurt
- 2 Tbsp flour/cornstarch
- 1 cup mozzarella cheese, shredded
- Cook and shred chicken. On medium heat cook onions in oil until translucent; next add garlic cloves. Add in coriander, cumin, salt and pepper. Next add in chicken stock and green chilies; bring to a boil and simmer for about 3-5 minutes. Add in greek yogurt and flour and whisk until combined. Let simmer for 5 additional minutes or until thickened. In a greased 13x9 add a little sauce to the bottom of the dish. Start layering your casserole with corn tortillas, suiza sauce and chicken and repeat. Bake at 350 for 25 minutes. Remove from oven and add mozzarella cheese and cook an additional 5 minutes.
- Serve with sour cream, pico de gallo and avocado.
