We are huge breakfast fans in this house….I think I am a little bit more then the rest of them but when I am the cook they just smile and enjoy. The best thing about breakfast it is even better for dinner!! A few weeks back I had an idea to make some Breakfast Taquitos on a Sunday morning. Well that dream just happened this past week when I finally got around to make them.
I do have a slight obsession with taquitos!
And Breakfast Taquitos were just as good!
My husband was shocked on how good they turned out!
Don’t forget to dip them in sour cream, salsa and my favorite guacamole!
So turn your next family breakfast into something yummy that your kids will be asking for more Breakfast Taquitos!
Even better they are awesome to through in the freezer for school days.
- 12 tortillas
- 8 eggs, scrambles
- ½ cup bell pepper, any color chopped
- ¼ cup white onion, chopped
- bacon or sausage
- 1 cup cheddar cheese
- Scramble eggs with peppers and onions until done. Cook bacon or sausage until done. Lay out tortillas and scoop about ¼ cup scrambled eggs with about a 1 Tbsp of cheddar cheese. Add on your favorite meat topping. Roll up and close together with toothpick. Place on a lightly sprayed cookie sheet and bake at 350 degrees for about 20 minutes. Occasionally roll over taquitos to get evenly browned.
- Serve with fresh salsa, sour cream or guacamole
