Beefy Nacho Soup

It’s cold here in Utah!  Which means I can officially make soup every week and it would be okay!  I was looking through some cook books and I came across this recipe from Pillsbury.   It was extremly tasty and full of flavor.  Also it was super easy to make at a minutes notice. Plus I like how most of the ingredients I already have on hand.

Beefy Nacho Soup

Slightly modified from Pillsbury
Ingredients
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 cup milk
  • 1 cup Cheddar cheese
  • salt and pepper to taste
  • 1 pd hamburger
  • 1 Tbsp taco seasoning
  • 1 can diced tomatoes with chilies
  • 1 cup milk
  • 1 can black beans, rinsed
  • ½ cheddar cheese, for topping
  • tortilla chips, for topping
Instructions
  1. Mix first 5 ingredients together in small sauce pan, to make a cheese sauce. Stirringuntil cheese is completely melted; set aside. Brown hamburger and cook until done. Add in cheddar cheese sauce, taco seasoning, tomatoes, milk and beans. Cook on low for 20 minutes. When ready to serve add some extra cheese on top and crumble tortilla chips
