Baked Pumpkin Donuts

I love that Fall is in the air!!  I love cooking this time of year and all the delicious smells that come along with it!  I have recently had a craving for pumpkin….anything with pumpkin!!  So I got to thinking about making some pumpkin donuts……but not the greasy unhealthy kind so I made Baked Pumpkin Donuts Holes!  They were shockingly delicious and really quick and easy to make.

Even my two year gobbled them up!!

That’s probably because they were covered in cinnamon and sugar!

Everyone in the family loved these Baked Pumpkin Donuts and they went super fast!


I even thought I would try some with a glaze instead!!

I think they tasted even better!!

No matter which way you make them, everyone will be satisfied!


Baked Pumpkin Donuts

Serves: About 36 mini cupcakes
Pumpkin donut batter
  • 1¾ cup flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp allspice
  • ⅛ tsp ground clove
  • ⅓ cup oil
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • ¾ cup pureed pumpkin
  • ½ cup milk
Cinnamon Coating
  • 4 Tbsp butter, melted
  • ½ cup sugar
  • 1 Tbsp cinnamon, more depending on your taste
  • 2 Tbsp milk
  • ½ cup powdered sugar
  • ½ tsp vanilla
  1. In a medium sized bowl combine flour, baking powder, salt, cinnamon, nutmeg, allspice and glove and mix till combined. In another medium sized bowl add oil, brown sugar, egg, vanilla, pumpkin and milk till combine. By hand mix dry ingredients to wet ingredients and str just until combined together. Evenly divide batter into a greased 24 mini cupcake pan. Bake at 350 degrees for 11 minutes.
  2. For cinnamon topping, let cool for 2 minutes. While cooling melt butter. In a separate bowl combine cinnamon and sugar. Dip muffin in butter then in topping. Lay donut holes on wax paper to finish cooling.
  3. For Glazed topping, Let cool completely. In a small bowl combine milk, powdered sugar and vanilla. Drizzle over donut holes. (If to think or runny just add more powder sugar or milk for the consistency you want)
