Mini M&M Pudding Cookies

I’m back again with another amazing Pudding cookie recipe!

You all know I have a huge weakness for Chocolate Chip Cookies…..add some M&M’s into the mix and I think they are even more amazing!

My work always does a cookie exchange with the other floors in the hospital.  A few people I work with bring in cookies and we  place a variety of different cookies on a Christmas plate and pass them out.   So By the time we get back we have 12 new plate of cookies from other departments.  It’s always fun to go around and visit the other floors in the hospital and spread some Christmas cheer!

So of course I needed to test out some cookies before I wanted my fellow co-workers to taste them.  The first thing that came to mind is Pudding Cookies of course!!   Then as I was at the grocery store I found this bag of cute mini M&M’s and I knew right away that I was going to make M&M Pudding cookies. (also got mini Chocolate chips)

Well these cookies past the test!  I don’t why I was surprised you can never go wrong with a Chocolate Chip Cookie!

Mini M&M Pudding Cookies

Ingredients
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups flour
  • 1 small box vanilla pudding
  • 1 tsp Baking Soda
  • 1 tsp salt
  • 1 cup mini chocolate chips
  • 1½ cup mini M&M's
Instructions
  1. Cream together sugars and butter until creamy. Add in eggs 1 at a time mixing in between each egg. Add in baking soda, salt, pudding mix, vanilla and flour and mix until well combined. Add in M&M's and mini chocolate chips, stirring in by hand.
  2. Bake at 350 degrees for 10-12 minutes. I like mine slightly under cooked!
  3. ENJOY!

Copycat Olive Garden’s Pasta E Fagioli Soup

I don’t know about you but I LOVE Olive Garden!    Every time me and girl friends get together we always meet up at Olive Garden.   I always and always get the Paste E Fagioli Soup with salad.   Now now let’s not  forget about the bread sticks and a side of alfredo dipping sauce!   Great…now I  want need to go to Olive Garden!   I’m pretty sure we always pick here because we want to eat “light and healthy” and with soup and salad your set…right!  Well wrong for me because I say bring on the bread sticks and keep them flowing and make sure my alfredo boat is always full!!!

Now with the temperatures dropping and snow falling it makes me want to eat soup and I always enjoy making soup for dinner.   Especially cause it is so easy to make and its usually low fat and very filing.   Except if you have bread and alfredo sauce!

I got this recipe Pasta E Fagioli recipe of of  Pinterest and I forgot which blog so I apologize but I promise you all love this recipe!

Now if I can only master that alfredo sauce I would never have to go out to eat ever again.

Create it or Bake it #9

 Hope everyone has recovered from Thanksgiving and Black Friday and get those few days of rest before Christmas is here.    I have been procrastinating a little bit this year!   Usually by this time im done shopping but I keep putting it off!   I really need to finish buying gifts for our loved ones and get them wrapped up this week so I can stop stressing and just sit back and enjoy the time.  This will be my sons 2nd Christmas, but technically it is his first being able to open gifts and I think he will have so much fun this year I can’t even wait!

We just had a huge snow storm that hit Salt Lake City.  Went to bed Saturday night with about and 2-3 inches and woke up Sunday morning with about 13 inches.  Definitely not expecting it, but it always helps me get into the Christmas spirit with fresh snow fall!

Sweet & Salty Kettle Corn

I have to have a snack while I watch movies.  If im at home or  even on those rare occasions when me and the hubs go out on a hot date to the movies. I have to have my popcorn! It doesn’t matter which way I have, I like it drenched in butter, gooey with caramel or simply sweet and salty.

One of my all time favorite popcorn flavors has got to be kettle corn!

When we go to the county fair or even Cabelas there is always those bags hanging and that sweet sweet aroma in the air.  Then it occurred to me why do I only have to have kettle corn only a few times a year.  I have tried the microwavable bags and they just aren’t the same as the fresh stuff.   So that is when it clicked, I  need to try to make my own at home so I can have it whenever I want.

Well folks this kettle corn is the Bomb!

It has all the great qualities as the stuff I spend $8.00 a bag to get.   It is sweet and it even has nice crunchy sugary shell.

First thing you need to do is grab your big pot pan and make sure you have lid.  Add the kernels and oil and set on medium heat .  Sliding pan back and forth occasionally.

(Now this is going to date me back 10 years, but this part reminds of Scream when Drew Barrymore is making popcorn when the phone rings…lol)

After you can see the oil bubbling up let add the sugar and again shake the pan a little bit more so the sugar doesn’t burn

Right when you hear the first pop, place the lid on top because you don’t want to loose an eye and those kernels are hot!  Shake pan a little bit more with lid on  until you hear the popping come to an end.

Place popcorn in a bowl and shake with salt.  Let cool for minutes then dive right on in!

Hashbrown & Egg Breakfast Casserole

There is nothing I love more than a delicious breakfast!!

 I wish I could make a nice and yummy breakfast for my family every morning.   But then reality kicks in and I realize im not superwoman.  On the days I work im up at 4am, drop the baby off to my mom by 5:20 and running to the time clock at 5:59.  As for my husband he is out the door at 6:15.  Plus at 4:30 in the morning the last thing im thinking about is breakfast.  So I really only have the weekends to make a big big breakfast.

One of the best ways to make breakfast, is to make it casserole style.  I love casserole dishes because they are easy to throw together, every one can all eat at the same time and you can even make it the night before and toss it in the oven in the morning while you play with the kiddos.

So I always cherish those mornings when we are all able to sleep in…..oh wait who am I kidding!

How many of you like to have breakfast for dinner?

We sure do!  We probably do at least once a month when we know we are going to have a late night.   So this is great idea to make ahead of time and simply just throw in the oven.

Also I never said this recipe was healthy but trust me I think its worth ALL the calories!!

I hope everyone had a great Thanksgiving!  We had lots of  fun being with family and running around with cousins that we don’t get to see very often and eating lots and lots of delicious food.  This year we didn’t have to do anything but bring the mashed potatoes for a lot of people.  My husband said never again to volunteer for potatoes because his wrist was killing him from peeling.  But he is a good sport and peel 20+ pounds for me.   Since we didn’t have to cook a turkey that means I have no turkey to make any of those yummy looking leftover recipes.  So this weekend im making a turkey to give some of those recipes a try.  So make sure to link up some of your favorite recipes for me to try.

Do I have any black Friday or should I say black Thursday shoppers?   I of course went out and got lots of great deals and spent way to much money. Did you guys get any great deals?
