Create It or Bake It #11

I hope everyone had a great Christmas last week, doesn’t it feel like Christmas was for ever ago? Anyways, we had a great Chrismtas and my little boy was so much this year.  It was fun to actually watch him open a present where as last year he just laid there.   We did end up catching our first minor cold so he has been down for a few days but I think he is starting to feel a little bit better finally.

I still can’t believe that it is already New Years Eve!  Do you all have any fun plans?  As you are all reading this post we will be up in the mountains at my parents cabin to bring in the New Year.  It’s the first time in a long time that I actually didn’t have to work the holiday.   Im excited because they always have a massive bonfire and everyone in their cabin association comes down for it.   It will be freezing cold but I think it will be fun.  Then after we are having a get together at their cabin and we all will stay up very late playing game and eating junk food.

Turkey and Wild Rice Soup

With all the major holidays pass us, that means we had a lot of really big family dinners.  For my family, this means we usually have turkey or ham.  This year we went with turkey because im not a big fan of ham.  I wanted to have turkey because I found a new soup recipe that I have been waiting to try.   When I was given the opportunity to try Pacific Organic Simply Chicken Stock.  I was extremely excited!  I have already fell in love with a few of there products all ready.  I love there Creamy Tomato Soup and their Chicken Noodle they are both perfect for a cold day.

Speaking of soup this Turkey and Wild Rice soup is the winner recipe I tried with my Pacific Organic Chicken Stock.  The  flavors of the broth is amazing, it brought a lot of great flavor to my recipe.   I also love how they either have low sodium or they are unsalted.  Which I think is huge in soups, I much rather be able to taste the soup rather then all the salt you get other brands of chicken broth.

The main thing I love about their products is they are all organic.  We don’t eat  as much organic foods as I would like, but when we have to opportunity we do.  I love how I can grab one of their containers and I am able to pronounce everything on the label.   Which to me it means im getting great quality and I know im getting the freshest products.

Here are a few interesting facts from Pacific Foods.  Its amazing what they do help save our environment and I like to think im taking part of it as well when I recycle my recycled containers.

Turkey & Wild Rice Soup

2 1/2 cups leftover turkey, chopped

1 cup wild rice

5 cups Pacific Organic Chicken Stock (or turkey stock)

1/2 cup onion, chopped

1/2 cup carrot, chopped

1/2 cup celery, chopped

1/2 cup mushrooms, chopped (optional)

2 cloves garlic, chopped

1 Tbsp soy sauce, reduced sodium

1/4 cup half and half

1/2 tsp salt

1/2 tsp black pepper

In a big stock pot add your chicken broth and veggies.  Let simmer for 10 minutes.  Next add in your rice and let simmer for 30 minutes.   Next add in your turkey,  half and half, soy sauce, salt and pepper and let  simmer for an additional 20 minutes.

Green Onion Cheeseball

I was hoping to have this recipe posted before Christmas but my laptop decided to catch a few viruses and shut down!  But I finally have my computer back and running I have a tons of catching up to do!

First off did everyone have a great Christmas!?

We sure did and the little man got spoiled like crazy!  He will have enough toys to last a lifetime.  On the down side he caught a little virus as well and we have been fighting a fever since Christmas Eve.  So we have been whiney, needy and not eating anything.  I was slightly bummed cause I was so excited for Christmas with him this year because technically its like his 1st Christmas where he can unwrap presents and be excited to play with them.  But we still had a great time visiting with family, friends and cousins.

With this time of year means a lot of family parties and get together’s.   Which in return mean lots and lots of food.   I’m not sure about everyone else’s families but in our family always has a few appetizers when we have big family get together’s that we all sit around on munch on.  Either we have a fruit tray, veggie tray or my personal favorite a cheese ball.  It’s always nice to have munchies while dinner is finishing up, waiting for everyone to get there or to help keep the kids from starving.

We have a grocery store here in Utah that has thee best fresh cheese balls.  So I took upun myself to recreate this fabulous cheese ball for the holidays.  It turned out perfect and everyone loved it!

It was the easiest recipe to throw together and surprisingly it tastes delicious!  I personally think mine tastes better than the grocery store.

I normally would have covered this cheese ball in almonds but I was making this for an event I knew some had nut allergies.

Merry Christmas!

Just wanted to wish everyone a Merry Christmas!!  Hope you all have great holiday with family friends!!

I have been without a computer for the last 5 days!  It has been torture not being able to blog and visit all my favorite sites….but the good news we are now virus free and I will get back into the blogging world on Thursday.    Plus I have gotten so many things accomplished in the last week that I otherwise would not have been able to do and was able to spend lots of time with my little boy!

 There will be no Create it or Bake it this week so make sure to come back next week and linkup!

Twice Baked Potatoes

I would say we are huge potato fans in our house!

We like them baked, wedged, fried or even as a soup.  But no matter what way we have them I still enjoy eating them.

I recently made these Twice Baked Potatoes because they looked good and easy enough to make and the perfect side dish to any meal.  I love how I was able to make the baked potatoes the night before.  I just added them to the oven as I was cooking and when they were all done I tossed it all together and placed in a baking dish and placed in the fridge.  All I had to do when I got home from work was to simply toss them in the oven.

 These are so creamy and full of flavor.  To top it off bacon is involved and I can never get enough bacon!
