Double Chocolate Zucchini Bread

I’m sure every one has an abundance of zucchini like I do!  I love zucchini bread but when I saw this recipe floating around Pinterest I knew I needed to give it a try…because everything is better with a little bit of chocolate or a lot of chocolate!

Double Chocolate Zucchini Bread

Ingredients
  • 2 eggs
  • ⅓ cup honey
  • ½ cup oil
  • ½ cup brown sugar
  • 1 tsp vanilla
  • 1 tsp salt
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ⅓ cup cocoa
  • 1⅔ cup flour
  • 2 cups grated zucchini, with skin
  • 1¼ cup chocolate chips
Instructions
  1. In a mixing bowl add the first 10 ingredients together, using a hand mixer until well combined. Stir in by hand the zucchini and chocolate chips. Place in a well greased loaf pan and bake at 350 for about 65-70 minutes. Test with a toothpick to make sure bread is completely done. Let cool for 15 minutes then remove from loaf pan to continue cooling. You can also garnish the top a few more added chocolate chips.

Skinny Frozen Banana Peanut Butter

We have had one the hottest July’s this year, last I heard we are on day 18 of having 100+ degrees.
It’s been a scorcher here!
With the heat it puts one thing on my mind….Ice cream, I love love ice cream!
But with dieting and watching what you eat I can’t always indulge with ice cream, which makes it a very sad day for this lady!
But now I have great news!
This recipe is great and its only about 90 calories a serving and its perfect for when you need an ice cream fix.  I never would have known it wasn’t ice cream if I didn’t make it myself.

Honey Lime Chicken Skewers

I can’t believe how great this recipe tasted!!  My husband described it as each bite had its own unique flavor and I would have to agree!  Plus im a HUGE fan of cilantro and I think that was one of the best parts!
The flavors absolutely compliment each other great and I think everyone needs to give this recipe
 a try!
 
 

Honey Lime Chicken Skewers

3 chicken breasts
3 Tbsp soy sauce
2 Tbsp Honey
1 Tbsp Olive Oil
juice from 1 lime
2 garlic gloves
1-2 tsp Siracha hot sauce
dash red pepper flakes
2 Tbsp cilantro, I added more

Cut chicken breasts into chunks and set aside.  In tupperware container add all the ingredients and mix; add chicken.  Then shake shake and let the juices marinate.  I would highly recommend marinating a few hours or overnight to get the full flavor.   Stab the chicken with skewers and place on barbecue and cook until juices are clear.  When done squirt with some more lime juice and of course add more cilantro.
Serve with white rice of even add some peppers and onions to the skewers
* if you use wood skewers soak in water for a 20 minutes and it helps stop them from burning

Crockpot Honey Sesame Chicken

I absolutely love cooking with my crockpot.  Its so nice to just toss everything into the crockpot and go about my day and to come home to nice cooked meal.
I came across this recipe on lots of other blogs and around Pinterest so and I figured since it was so popular that we needed to give it a try.
 



Crockpot Honey Sesame Chicken

3-4 chicken breasts
salt and pepper, to taste
1 cup honey
1/2 cup soy sauce
1/2 cup diced onion
1/4 cup ketchup
2 Tbsp oil
2 garlic gloves
1/4 tsp red pepper
4 tsp cornstarch
6 Tbsp water
1/2 tsp sesame seeds
2 scallions, optional

Season chicken breasts with salt and pepper.  In the crockpot add the honey, soy sauce, onion, ketchup, oil, garlic and red pepper and stir.  Add the seasoned chicken.  Cook on low for 4-5 hours.  When done remove chicken and shred and set aside.  In a small bowl add the water and cornstarch together and mix, then add to the sauce in the crockpot until thickened.  Either add the chicken back into the sauce or you can drizzle the sauce on top of the chicken.
Serve with rice or noodles.

My Notes:
This recipe was really tasty but I thought it was really salty.  I usually use reduced sodium soy sauce but I was at Costco and bought the wrong kind…dang-it! So I would recommend either using less soy sauce or use the reduced sodium, other then that it was a great meal.

Navajo Tacos with Homemade Scones

We have been making this recipe for as long as I can remember.  It was always my favorite growing up and I loved to help my dad make them.
 
You can use this recipe to make dinner or you can just use the scone recipe for breakfast scones.
 


Navajo Tacos with Homemade Scones

1 pound hamburger
Cheese
Tomatoes, we used my Pico De Gallo
Lettuce
Avocado
Ranch Dressing, optional
Chili, optional

Cook hamburger like you would make taco meat.  Cook the scones according to directions.
When done stack you Navajo taco with your favorite toppings.
Everyone in my family likes them different.  I like mine like the picture were my husband likes chili and cheese on his.  So you can really mix it up and try all new kinds of navajo tacos.
