Banana Bread Cookies

I love bananas!  I love cookies!
Why not make a banana bread cookies!
My husbands grandma makes the best Banana Bread Cookies!
They taste fantastic!  They are so soft and moist and the cream cheese frosting simply completes these cookies.
 

Banana Bread Cookies

1 cup shortening
1 cup sugar
2 eggs
1 cup mashed bananas, about 3
1 tsp vanilla
3 cups flour
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup buttermilk
1 cup nuts, optional
1 can cream cheese frosting

Cream together shortening, sugar and eggs. Add in bananas, then add buttermilk and vanilla.  Next add in flour, baking soda, and salt and blend all together until combined.
Bake on a cookie sheet at 350 for 10 minutes  They will not look done but trust me they are done.
When cooled spread cream cheese frosting on top.

My Notes:
I didn’t have buttermilk so I found a substitution online and it seemed to work just fine. 1/2 cup milk and 1/2 tsp lemon juice stir and let sit for 5 minutes.

Beef and Broccoli Stir-fry

I have officially decided that I love Chinese food, I also decided that I don’t attempt to make enough Chinese dishes.  One of  my all time favorite Chinese meals is  beef and broccoli.  I don’t know what it is but the flavors together are great, with the crisp bite  broccoli.   I thought this dish was fantastic and it was so easy to throw together.

Beer Can Chicken

Well, I can’t take credit for making this dish.  I came home from work the other day to find the husband firing up the grill and making dinner.  Yippee I love when that happens!  The husband was making a Beer Can Chicken.  If you have never tasted this type of chicken then you are missing out.  The chicken is so tender and juicy.
 

Beer Can Chicken

1 whole chicken
1 Can Beer or Sprite
Sweet Baby Rays Barbecue Sauce
Seasoning: Salt, Pepper, Montreal Chicken, garlic powder

You need to have the metal contraption to hold the chicken and the can.  They are sold in many stores.

Baste your chicken in your favorite spices.  We also used some barbecue sauce to help keep the chicken moist. Place chicken on top of the open can.  Place on grill with medium flame and cook for about 45-60 minutes until chicken is well cooked.  Check often to make sure you are not getting all the heat in the same spot. When done remove from heat.

If you are worried about using beer you can use sprite.  Your basically just steaming the beer out to help keep the chicken moist.

Easy Homemade Blueberry Muffins

With me working every other weekend and when we actually have a weekend home together I like to make breakfast.  I usually make a big breakfast but on this day I wanted something delicious and quick! 
When certain fruits come on sale for a great price I like to buy them and freeze them.  I think they taste better then the frozen kind you buy at the store.  Since I needed to start using up my stash of frozen fruit I settled on making muffins.  
Don’t get me wrong Betty Crocker can make a nice mix but I wanted to make the real deal.  This recipe was fantastic!  Me & the hubby loved them.  I wish I had more berries now so I could make some tomorrow!
 
 


 Easy Homemade Blueberry Muffins
Recipe makes 8 muffins

1 1/2 cups flour
3/4 cup sugar, plus a 1 tsp for muffin tops
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 milk
1 1/2 tsp vanilla extract
1 cup blueberries-Fresh or Frozen, not thawed

Preheat oven to 400 degrees. Combine flour, sugar, baking powder, and salt in bowl and mix well.  In a separate bowl add oil, egg, milk and vanilla.  Add liquid mixture to dry ingredients.  Mixing with a fork stir just until combined.  Add in blueberries and lightly stir.  Place batter in muffin tins and sprinkle remaining sugar on the top of each muffin and bake for 20 minutes.

Steak Strognauff

 

STEAK STROGNAUFF

3-4 petite sirloin steaks, sliced thinly
1/2 medium onion, diced
1/2 cup beef broth
1 Tbsp Worcestershire sauce
1 can Cream of Mushroom Soup
1 cup sour cream
1 bag wide egg noodles, I used healthy Harvest Wheat noodles
Salt and Pepper to taste

Cut steak into thin strips.  Place in Crock pot and season with salt an pepper add onion.  In a separate bowl add soup, broth and Worcestershire sauce and mix.  Place on top of beef and lightly stir.  Cook on high for 3-4 hours or low 7-8 hours.  When about ready to serve add in Sour cream.  Serve on top of cooked egg noodles and enjoy.

My Notes:
I didn’t want to waste my beef broth for this recipe.  So I added the extra into an ice cube tray and froze then transferred into a Ziploc bag for a future recipe.

I personally think this recipe tastes better the next day!

 

Easy DIY Crib Rail Cover

My little man has finally started the biting phase.  We have about 7 chompers now and at any chance he gets he will bite you and let me tell you, those teeth are SHARP!  I have been wanting to make a crib rail cover before he starts biting his crib and leave those cute little teeth marks.
I honestly couldn’t believe how easy they were to actually make. I made 2 of them in just one night.  (The extra one I took to grandma’s house for her crib)  I know you are able to buy crib rail covers at most baby stores but my crib has an extra wide top and they wouldn’t fit.   So I decided to make one instead.  The best part it only cost me less then 20 bucks for the quilted fabric and the bias tape.
First, you need to lay out your fabric and measure to the length you need.  Make sure you add an extra 2 inches for when you fold in the sides for sewing.
 I choose to use the quilted fabric that already had the batting on the inside.  Saving my self an extra step.
The longest and most time consuming part is the pinning.  I got smarter with my second cover, I folded the fabric over once and removed the pin and folded over again and re-pinned.   Saving myself, to sew around the cover twice.

For the ties I used the bias tape.  I did sew down the edge to make it look more complete and so I didn’t have to worry about it fraying open.  I measured the ties out evenly with my cover size.  I would recommend about two inches in from the corner edge so its easier to tie to your crib.
YIPPEE!!   Your done!  It was so simple and easy and ALOT cheaper then having to buy one.  The best part you are able to design and pick the colors of your nursery to coordinate.

Chocolate Cake Roll

First of all I can believe that I actually made this….and that it actually worked!  I had major doubts about making this.  I thought for sure it would crumble the moment I rolled it.  
My mom loves cake rolls.  So for this Mothers Day I wanted to get one for dessert but I was unable to find them at the grocery stores anymore…boo! I knew Baskin Robins had them but was not wanting to spend the  money.  So I decided I would try it at home and see what happens.
 
 

Chocolate Cake roll

Cake:
1/2 cup flour
1/3 cup unsweetened cocoa powder
3/4 tsp baking powder
1/4 tsp salt
5 large eggs at room temperature
3/4 cup granulated sugar
1 1/2 tsp vanilla extract

Filling:
Your favorite ice cream flavor.   My mom likes vanilla

Preheat oven to 375 degrees.  Spray your cookie sheet with cooking spray, line with parchment paper or wax paper and spray again.  In a small bowl combine flour, cocoa, baking powder and salt and mix well and set aside. Separate egg whites and yolks in two separate bowls.  Beat whites on medium with hand mixer until foamy.  Mix in 1/2 cup of sugar and continue to mix until thick and stiff, about 4 minutes.  Next beat your egg yolks with the remaining 1/4 cup sugar and vanilla until thickened, about 3 minutes. On low speed beat in flour mixture until blended. Add in egg whites and mix until well combined.  Pour batter onto the greased cookie sheet.  Spread until even.  Place in oven and cook for 12-14 minutes.  Let cool for 2 minutes on wire rack.
Dust a clean dish towel with powdered sugar or cocoa.  Loosen the edges of the cake with a knife and flip onto dusted dish towel.  Slowly peel off parchment paper and start rolling at the short end.(your rolling the towel in the cake) Place seam down on wire rack and let cool completely, about 15 minutes.  At the this time take your ice cream out so it can start to soften.
When cooled unroll cake.  Add the ice cream on top and try to smooth out the best that you can.  Roll Cake back up.  Wrap tightly in parchment paper, then in foil and let freeze, works better over night.

Creamy Chicken Enchilada’s

We are the HUGE enchilada fans!  It is always our go to meal when I can think of anything to make!  I like to try new enchilada recipes but as for my husband he always tells me not to mess with something that is already delicious!  
 
 


CREAMY CHICKEN ENCHILADA’S

8-9 flour tortillas
2-3 chicken breasts, boiled and shredded
1 can favorite enchilada sauce, I used old el paso
1 can green chilis
4oz cream cheese
1 Tbsp taco seasoning
1 cup shredded cheddar cheese.

Boil chicken and shred.  Add green chilis, cream cheese and taco seasoning to the chicken and combine. Lay your tortillas out and add the chicken mixture. Roll and place in baking dish with seam side down.  Cover with enchilada sauce and cook until warm at 350 for about 15 minutes.  Then add shredded cheese and place back in oven for 5 minutes or until cheese is melted.
Serve with your favorite kind of Spanish Rice or my refried beans

*You can add extra cheese inside the enchilada if wanted

Authentic Spanish Rice

Once again we love Mexican Food!  I don’t always like to go out to eat so im glad I have came across this recipe to make it at home!
The taste was incredible and I can’t believe how easy it was to make!
 

SPANISH RICE

2 cup long grain white rice
4 cups water or chicken broth, I used broth
2 cubes of Knorrs brand Caldo de tomato
1/2 cup chopped onion
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp black pepper
dash of salt

Place all ingredients into your rice cooker and stir.  Push start!  Pretty easy if you ask me!!

My Notes:
Next time I will dissolve the Knorr cubes in the water or broth first then add in the rest of the ingredients.
